What's in Green Tea?

Green tea contains some members of a large group of chemicals called polyphenols. There are literally thousands of polyphenolic chemicals found in the natural world. These chemicals are divided into groups, based somewhat on the number of rings in their structure. Some of the polyphenolic group names are phenolic acids, flavonoids, stilbenes, and lignans. There are six subclasses of flavonoids alone, including catechins which are found in green tea.

There are hundreds of polyphenolic chemicals found in foods from A to Z (or at least A to W)--in berries, fruits, grains, kale, onions, parsley, potatoes, soy, vegetables and many others. Some of the better studied compositions include those in apples, chocolate, soy, tea and wine. Resveratrol is the polyphenolic chemical found in red wine, that may contribute to a reduced risk of heart disease--at least it has been shown to increase the lifespan of yeast and mice!
